[Project Dinner] Update



Every now and then I get a really good idea.  And not to toot my own horn or anything, but this whole "have the kids make dinner" thing was a really good idea.  Rivaled only by the "have the kids do the laundry" thing.

I'm on a roll.

Anyway, I thought you might like to know what's been cooking around these parts.  My son is nothing if not confident.  And this is evident in the kitchen.  His first menu choice involved making bread.  He wanted to make my Mom's world famous pizza rolls.  It was a three hour proposition.  I was skeptical at first, but by golly if he didn't actually do it?  And he did it well!  I guess he's been paying attention all these years.  He impressed us all with his wicked bread making skills.  He kneaded and shaped and stuffed.  They were so delicious that I didn't even get a picture.  It was every man for himself when those rolls were placed on the table, and I had to get into the fray to survive.

His second meal go around, he opted for the easier spaghetti.  We make our sauce from scratch with tomatoes that we bottle from our garden.  I had to encourage a vegetable side dish.  He eventually gave in.  Fast easy and delicious.  Another success.

My daughter chose tin foil dinners for her meal last week.  Have I mentioned that it is HOT here?  No one wanted to cook indoors, so this was the perfect solution.  She peeled and sliced potatoes and carrots.  Packaged it up all pretty-like with a hamburger patty and cheese.  If summer had a taste, this might be it.

  2. OK, I'm a little bit embarrassed to admit this. But the only "scratch" part of this recipe is the home canned tomatoes. But they really make all the difference. This is the best sauce! And it tastes so wonderfully fresh. I just use a packet of spaghetti sauce mix from the store. I think it costs 50 cents. Take a quart of home canned tomatoes. Puree them in your blender (mostly because my kids are anti-tomato chunks). Add two packets of mix. (ignore the directions on the packet). Stir and cook on medium heat until thick. Less than five minutes. Done!
